Preheat the oven to 350°F (175°C).
Line two baking sheets with foil or parchment paper.
Lightly spray the baking sheets with cooking spray.
Using kitchen scissors or a sharp knife, cut each pita into small triangle-shaped chips.
Place the pita triangles in a large mixing bowl.
Drizzle with olive oil.
Sprinkle with za’atar, salt, and pepper.
Toss thoroughly until all pieces are evenly coated.
Arrange the pita chips in a single layer on the prepared baking sheets.
Bake for 10–12 minutes, or until golden brown and crispy.
Remove from the oven and allow to cool slightly.
Serve immediately or store for later.
