Preheat the oven to 400°F (204°C).
Lightly grease a 9x13-inch or 3-quart baking dish with cooking spray or a small amount of olive oil.
Arrange the chicken breasts in a single layer in the prepared baking dish.
In a small bowl, whisk together the balsamic vinegar, honey, minced garlic, olive oil, Italian seasoning, salt, and black pepper.
Pour the balsamic mixture evenly over the chicken.
Turn each chicken breast in the sauce to coat both sides thoroughly.
Arrange the grape tomatoes around the chicken breasts.
Place 1 or 2 fresh tomato slices on top of each piece of chicken.
Bake uncovered for approximately 20 to 25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) at its thickest point.
During the final 5 minutes of cooking, place a slice of fresh mozzarella over each chicken breast.
Return the dish to the oven and continue baking until the mozzarella is soft and melted.
For a lightly browned finish, switch the oven to high broil for 2 to 3 minutes. Watch carefully so the cheese doesn't burn.
Remove the Baked Caprese Chicken from the oven and allow it to rest briefly.
Sprinkle generously with chopped fresh basil and spoon some of the balsamic pan juices and roasted tomatoes around each serving.
Serve warm with your favorite side dishes.
