Avocado Toast with Egg and Tomato is an easy breakfast made with toasted sourdough, creamy avocado, juicy tomatoes, and perfectly poached eggs. Ready in only 20 minutes.

Ingredients
  

  • 2 slices sourdough bread or sprouted wheat bread
  • 1 small ripe avocado
  • 1 –2 cups water
  • 2 large eggs
  • 6 cherry tomatoes halved
  • 1 tablespoon white vinegar
  • Pinch of salt
  • Freshly cracked black pepper
  • Fresh chives chopped

Instructions
 

  • Step 1: Toast the Bread
  • Toast the sourdough slices until golden brown and crisp. Set aside while you prepare the toppings.
  • Step 2: Prepare the Avocado
  • Cut the avocado in half and remove the pit.
  • Scoop the flesh into a medium bowl.
  • Mash with a fork until smooth or slightly chunky, depending on your preference.
  • Season with salt and freshly cracked black pepper.
  • Step 3: Poach the Eggs
  • Fill a medium saucepan with 1 to 2 cups of water and bring it to a gentle boil.
  • Reduce the heat until the water reaches a gentle simmer.
  • Add the white vinegar.
  • Crack one egg into a small bowl or cup.
  • Using a spoon, create a gentle whirlpool in the simmering water.
  • Carefully slide the egg into the center.
  • Cook for 3 to 4 minutes until the white is set and the yolk remains soft.
  • Remove the egg using a slotted spoon and place it on a paper towel.
  • Repeat with the second egg.
  • Step 4: Assemble the Toast
  • Spread the mashed avocado evenly over each slice of toasted bread.
  • Arrange the halved cherry tomatoes over the avocado.
  • Carefully place one poached egg on each slice.
  • Season with freshly cracked black pepper and garnish with chopped fresh chives.
  • Serve immediately.

Notes

  • Whole wheat, rye, or multigrain bread work well as alternatives.
  • Add feta cheese, goat cheese, or crumbled cotija for extra flavor.
  • Smoked salmon makes an excellent protein addition.
  • Baby spinach or arugula adds freshness and nutrients.
  • Lemon juice mixed into the avocado helps prevent browning.
