Crack one egg into a small bowl or cup.

Remove the egg using a slotted spoon and place it on a paper towel.
Repeat with the second egg.
Step 4: Assemble the Toast
Spread the mashed avocado evenly over each slice of toasted bread.
Arrange the halved cherry tomatoes over the avocado.
Carefully place one poached egg on each slice.
Season with freshly cracked black pepper and garnish with chopped fresh chives.
