Avocado Bean Toast (5-Minute Cheap Breakfast)
Avocado Bean Toast is a quick and healthy breakfast made with mashed avocado and white beans.

- 1/3 cup canned white beans drained and rinsed
- 1/2 ripe avocado pitted and peeled
- Fresh lemon juice to taste
- Salt to taste
- 2 small slices bread toasted (whole wheat sourdough recommended)
- Cherry tomatoes optional
- Everything bagel seasoning optional
In a small bowl, combine the white beans and avocado.
Mash with a fork until mostly smooth but slightly chunky.
Add fresh lemon juice and salt to taste.
Toast your bread slices until golden and crisp.
Spread the avocado bean mixture evenly over the toast.
Top with cherry tomatoes and everything bagel seasoning if desired.
- You can add boiled eggs for extra protein
- Replace white beans with chickpeas if needed
