Apple Pie Pancakes with Vanilla Maple Syrup

peeled and diced

Vanilla Maple Syrup

vanilla extract
Instructions
Peel and dice the apples, then toss them with lemon juice to prevent browning. Set aside.
In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
In a separate bowl, whisk milk, egg, and melted butter until combined.
Pour the wet ingredients into the dry ingredients and stir gently until just combined.
Fold in the diced apples.
Heat a non-stick skillet or griddle over medium heat and lightly grease it.
Pour 1/4 cup batter per pancake onto the skillet and cook until bubbles form, about 2–3 minutes. Flip and cook another 1–2 minutes until golden.
Warm the maple syrup gently and stir in vanilla extract.
