Apple Pie Pancakes with Vanilla Maple Syrup

Ingredients
  

  • 1 cup all-purpose flour or whole wheat flour
  • 1 tablespoon sugar brown sugar recommended
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg optional
  • 1/4 teaspoon salt
  • 1 cup milk dairy or almond/oat milk
  • 1 large egg
  • 2 tablespoons melted butter or coconut oil
  • 1 cup apples peeled and diced
  • 1 teaspoon lemon juice

Vanilla Maple Syrup

  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract

Instructions
 

  • Peel and dice the apples, then toss them with lemon juice to prevent browning. Set aside.
  • In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  • In a separate bowl, whisk milk, egg, and melted butter until combined.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  • Fold in the diced apples.
  • Heat a non-stick skillet or griddle over medium heat and lightly grease it.
  • Pour 1/4 cup batter per pancake onto the skillet and cook until bubbles form, about 2–3 minutes. Flip and cook another 1–2 minutes until golden.
  • Warm the maple syrup gently and stir in vanilla extract.
