Ingredients

Apple Fritter Bites

  • Nonstick cooking spray
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 2 teaspoons ground cinnamon
  • 1/4 cup unsalted butter melted
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon alcohol-free vanilla extract
  • 1/2 cup no-sugar-added applesauce
  • 1 1/2 cups peeled and finely diced Honeycrisp apples about 2 medium apples

Apple Glaze

  • 2 cups powdered sugar
  • 1/3 cup plus 2 tablespoons apple cider or 100% apple juice

Instructions

  • Preheat the oven to 400°F (200°C). Lightly coat a large baking sheet with nonstick cooking spray.
  • In a medium bowl, whisk together the flour, baking powder, kosher salt, and cinnamon until evenly combined.
  • Pour the melted butter into a large mixing bowl. Whisk in the granulated sugar, followed by the egg.
  • Stir in the alcohol-free vanilla extract and applesauce until smooth.
  • Add the dry ingredients to the wet mixture. Stir just until no dry streaks remain, taking care not to overmix.
  • Gently fold in the finely diced Honeycrisp apples until evenly distributed.
  • Scoop approximately 1 tablespoon of batter for each fritter and arrange the mounds a few inches apart on the prepared baking sheet.
  • Bake the Apple Fritter Bites for 10 minutes. Remove the baking sheet from the oven and switch the broiler to high.
  • Meanwhile, make the glaze by whisking the powdered sugar and apple cider or apple juice together until smooth. The glaze should be fairly thin and easy to brush.
  • Brush a layer of glaze over each warm fritter, allowing some to drip naturally down the sides.
  • Return the baking sheet to the oven and broil for 2–4 minutes, rotating the pan every minute for even caramelization. Watch carefully because the sugary glaze can brown very quickly.
  • Remove the fritters as soon as their tops are lightly caramelized.
  • Brush the remaining glaze over the warm fritter bites.
  • Allow them to rest on the baking sheet for approximately 15 minutes, or until the glaze has set.

Notes

Honeycrisp apples give these fritters a naturally sweet, crisp apple flavor. For a more tart dessert, substitute Granny Smith apples.
Apple juice can be used instead of apple cider in the glaze. Choose 100% apple juice for a clean fruit flavor.
A pinch of nutmeg or ground ginger can be added alongside the cinnamon for a warmer fall spice profile.
