Apple Crumb Cookies

Ingredients
  

For the Cookie Dough:

  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt

For the Apple Filling:

  • 2 medium apples peeled, cored, diced
  • 2 tablespoons all-purpose flour
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice

For the Crumb Topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup light brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 cup cold unsalted butter

Instructions
 

  • Prepare the apple filling by mixing diced apples, flour, sugar, cinnamon, nutmeg, and lemon juice. Set aside.
  • Make the crumb topping by combining flour, brown sugar, and cinnamon. Cut in cold butter until crumbly. Chill.
  • Cream butter, granulated sugar, and brown sugar until light and fluffy.
  • Add egg and vanilla extract, mixing well.
  • In another bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt.
  • Gradually mix dry ingredients into wet ingredients until just combined.
  • Preheat oven to 375°F (190°C) and line baking sheets.
  • Scoop dough onto baking sheets. Create an indentation in each cookie.
  • Fill with apple mixture and top with crumb topping.
  • Bake Apple Crumb Cookies for 15–18 minutes until golden.
  • Cool slightly before transferring to a wire rack.

Notes

  • Swap apples with pears for a variation
  • Add chopped nuts for crunch
  • Serve warm with tea or coffee
