Ingredients

  • 1 ½ cups 360ml milk, dairy or nondairy
  • 2 large eggs
  • ½ cup 120ml pure maple syrup
  • ½ cup 120g unsweetened applesauce
  • 3 cups 255g old-fashioned whole rolled oats
  • 1 teaspoon baking powder
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon salt
  • 1 heaping cup 120g peeled, chopped apple
  • ½ cup 50g chopped walnuts or pecans, optional
  • Coarse sugar for topping optional
  • Nonstick cooking spray

Instructions

  • Preheat the oven to 350°F (177°C).
  • Generously coat a standard 12-cup muffin pan with nonstick cooking spray. You can use muffin liners, but the oatmeal may stick slightly to them, so a well-greased pan works especially well.
  • In a large mixing bowl, whisk together the milk, eggs, maple syrup, and unsweetened applesauce.
  • Add the rolled oats, baking powder, cinnamon, nutmeg, vanilla, and salt. Stir until thoroughly combined.
  • Fold in the chopped apples. If using walnuts or pecans, fold them in at this stage as well.
  • Don't worry if the mixture looks fairly liquid. The oats will absorb much of the liquid while baking.
  • Divide the Apple Cinnamon Baked Oatmeal Cups mixture evenly among the 12 prepared muffin cups. Make sure each portion contains both oats and liquid.
  • Fill each muffin cup nearly to the top. Sprinkle with a little coarse sugar, if desired.
  • Bake for 28–30 minutes, or until the tops look set and the edges are lightly golden brown.
  • If the tops begin browning too quickly, loosely cover the muffin pan with aluminum foil for the remaining baking time.
  • Remove from the oven and let the oatmeal cups cool in the pan for 5–10 minutes.
  • Carefully remove each cup and serve warm, or transfer to a cooling rack before storing.

Notes

Use your favorite dairy or nondairy milk. Oat milk, almond milk, and regular dairy milk can all work well.
Pears can replace the apples for a different fruit variation.
For additional sweetness, serve warm oatmeal cups with an extra drizzle of maple syrup.
A spoonful of yogurt, nut butter, or additional chopped fruit makes an easy topping and turns a couple of oatmeal cups into a more substantial breakfast.
