Almond Flour Cookies

Soft almond flour cookies made with simple ingredients.

Ingredients
  

  • 2 cups almond flour blanched
  • 1/2 teaspoon baking powder
  • 1/4 cup butter or vegan butter softened
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Optional: chocolate chips

Instructions
 

  • Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine almond flour and baking powder.
  • Add softened butter, maple syrup, and vanilla extract. Mix until a dough forms.
  • Fold in chocolate chips if using.
  • Shape into 6 large or 12 small cookie balls and place on the tray.
  • Press each ball gently to form a cookie shape.
  • Bake for 10–12 minutes until edges turn lightly golden.
  • Let the almond flour cookies cool completely before serving.

Notes

  • Add chopped nuts for extra crunch.
  • Serve with tea, coffee, or milk.
  • Sprinkle sea salt on top for a sweet-salty finish.
