Air Fryer Veggie Kebabs

Air Fryer Veggie Kebabs are quick and healthy vegetable skewers.

Ingredients
  

  • 8 ounces baby bella mushrooms
  • 1 medium zucchini
  • 1 cup cherry tomatoes
  • 1 orange bell pepper
  • 1 yellow bell pepper
  • ½ red onion
  • 2 tablespoons olive oil
  • 1 ½ teaspoons herbs de Provence
  • ½ teaspoon garlic salt

Instructions
 

  • Preheat your air fryer to 400°F for 5 minutes.
  • Cut the bell peppers and red onion into large, even pieces and place them in a mixing bowl.
  • Wash and slice the zucchini into ½-inch rounds, then add to the bowl.
  • Clean the mushrooms and tomatoes and add them to the mixture.
  • Drizzle olive oil over the vegetables, then sprinkle herbs de Provence and garlic salt. Toss gently until evenly coated.
  • Thread the vegetables onto skewers, alternating each type for even cooking.
  • Place the skewers in the air fryer basket in a single layer.
  • Cook Air Fryer Veggie Kebabs for 6–8 minutes or until tender and slightly charred.

Notes

  • Serve with rice, quinoa, or flatbread for a complete meal.
  • Pair with yogurt-based or tahini sauce for dipping.
  • Add protein like tofu or beef sausage cubes for variation.
