Preheat your air fryer to 400°F for 5 minutes.
Cut the bell peppers and red onion into large, even pieces and place them in a mixing bowl.
Wash and slice the zucchini into ½-inch rounds, then add to the bowl.
Clean the mushrooms and tomatoes and add them to the mixture.
Drizzle olive oil over the vegetables, then sprinkle herbs de Provence and garlic salt. Toss gently until evenly coated.
Thread the vegetables onto skewers, alternating each type for even cooking.
Place the skewers in the air fryer basket in a single layer.
