Air Fryer Vegetables

Air Fryer Vegetables are a quick and healthy side dish made with fresh vegetables, olive oil, and seasonings.

Ingredients
  

  • 1 large bell pepper cut into 1½-inch pieces
  • 1 medium zucchini sliced ¼-inch thick
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup cremini mushrooms sliced
  • ½ large red onion cut into 1-inch pieces
  • ¼ cup olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat the air fryer to 380°F (193°C).
  • Wash and dry all vegetables thoroughly.
  • Cut the vegetables into uniform-sized pieces for even cooking.
  • Place the bell pepper, zucchini, broccoli, cauliflower, mushrooms, and red onion into a large mixing bowl.
  • Drizzle with olive oil.
  • Sprinkle with garlic powder, sea salt, and black pepper.
  • Toss until all vegetables are evenly coated.
  • Arrange the vegetables in a single layer in the air fryer basket.
  • Avoid overcrowding and cook in batches if necessary.
  • Air fry for 8 minutes.
  • Shake the basket halfway through cooking.
  • Continue cooking until vegetables are tender and lightly browned around the edges.
  • Serve immediately while warm

Notes

  • You can substitute vegetables based on seasonal availability.
  • Brussels sprouts, carrots, asparagus, and green beans work well.
  • Adjust cooking time depending on the size of your vegetable pieces.
