Air Fryer Vegetables are a quick and healthy side dish made with fresh mixed vegetables and simple seasonings.

Ingredients
  

  • 1 large bell pepper cut into 1.5-inch pieces
  • 1 medium zucchini sliced ¼ inch thick
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup cremini mushrooms sliced
  • ½ large red onion cut into 1-inch pieces with layers separated
  • ¼ cup olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat the air fryer to 380°F (193°C).
  • Wash and dry all vegetables thoroughly.
  • Cut the vegetables into uniform-sized pieces to ensure even cooking.
  • Place the bell pepper, zucchini, broccoli, cauliflower, mushrooms, and red onion in a large mixing bowl.
  • Drizzle with olive oil.
  • Add garlic powder, sea salt, and black pepper.
  • Toss everything until the vegetables are evenly coated.
  • Arrange the vegetables in a single layer in the air fryer basket. Avoid overcrowding for the best texture.
  • Cook the Air Fryer Vegetables for 8 minutes, shaking the basket halfway through cooking.
  • Check for tenderness and lightly browned edges. If needed, cook for an additional 1–3 minutes.
  • Serve immediately while warm.

Notes

  • Substitute yellow squash for zucchini if desired.
  • Add Brussels sprouts, asparagus, or green beans for variety.
  • Serve alongside grilled chicken, steak, fish, or plant-based proteins.
