Air Fryer Sausage Bake

Air Fryer Sausage Bake combines juicy halal sausages, crispy potato wedges, roasted vegetables, and a rich tomato sauce in one easy family-friendly meal that's ready in about 45 minutes.

Ingredients
  

  • 1 red onion quartered (or 1 leek, cut into chunks)
  • 1 red bell pepper seeded and chopped
  • 180 g cherry tomatoes
  • 1 medium zucchini courgette, cut into 2 cm chunks
  • Olive oil spray
  • 150 ml chicken stock
  • 2 tablespoons tomato purée
  • 4 medium potatoes about 400 g, scrubbed and cut into wedges
  • 8 halal beef or chicken sausages
  • Fresh basil leaves for garnish (optional)

Instructions
 

  • Preheat the air fryer to 190°C (375°F).
  • Place the onion, red pepper, cherry tomatoes, and zucchini into an air fryer-safe baking dish or container. Spray lightly with olive oil.
  • Air fry for 10 minutes.
  • In a small jug, whisk together the chicken stock and tomato purée.
  • Pour the mixture over the vegetables and cook for another 5 minutes until the vegetables begin to soften.
  • Meanwhile, toss the potato wedges with a light spray of olive oil.
  • Arrange the potatoes in the air fryer basket and cook for 12 minutes.
  • Shake the basket or turn the potatoes.
  • Add the halal beef or chicken sausages on top of the potatoes.
  • Continue cooking for 10 minutes, turning the sausages halfway through, until they are browned and fully cooked.
  • Combine the roasted vegetables with the potatoes and sausages.
  • Return everything to the air fryer for 2 minutes to heat through.
  • Serve the Air Fryer Sausage Bake immediately, garnished with fresh basil if desired.

Notes

  • Serve with crusty bread to soak up the flavorful tomato sauce.
  • Pair with a crisp green salad for a complete meal.
  • Fresh thyme or oregano can be substituted for basil.
  • Add a pinch of chili flakes for a little extra heat.
