Preheat the air fryer to 190°C (375°F).
Place the onion, red pepper, cherry tomatoes, and zucchini into an air fryer-safe baking dish or container. Spray lightly with olive oil.
Air fry for 10 minutes.
In a small jug, whisk together the chicken stock and tomato purée.
Pour the mixture over the vegetables and cook for another 5 minutes until the vegetables begin to soften.
Meanwhile, toss the potato wedges with a light spray of olive oil.
Arrange the potatoes in the air fryer basket and cook for 12 minutes.
Shake the basket or turn the potatoes.
Add the halal beef or chicken sausages on top of the potatoes.
Continue cooking for 10 minutes, turning the sausages halfway through, until they are browned and fully cooked.
Combine the roasted vegetables with the potatoes and sausages.
Return everything to the air fryer for 2 minutes to heat through.
Serve the Air Fryer Sausage Bake immediately, garnished with fresh basil if desired.
