1½–2 lb center-cut salmon filletsskin removed and cut into 1-inch pieces
2tablespoonsolive oil
Juice of ½ lemon
1tablespoonhoney
2tablespoonssoy sauce or gluten-free tamari
3–4 garlic clovesminced
¼teaspoononion powder
¾teaspoonsmoked paprika
½teaspoonblack pepper
½teaspoonsea salt
For the Bang Bang Sauce
½cupmayonnaise
3tablespoonssweet chili sauce
½–1 tablespoon srirachaadjusted to taste
2teaspoonshoney
1teaspoonrice vinegar
Instructions
Cut the salmon into approximately 1-inch cubes, keeping the pieces as similar in size as possible. Place them in a medium bowl.
In a separate small bowl, whisk together the olive oil, lemon juice, honey, soy sauce, minced garlic, onion powder, smoked paprika, black pepper, and sea salt.
Pour the marinade over the salmon and gently toss until every piece is evenly coated. Let the salmon marinate for 15–30 minutes. Avoid marinating longer than 30 minutes because the lemon juice can begin to affect the texture of the fish.
Arrange the salmon cubes in the air fryer basket in a single layer, leaving a little space between the pieces. Cook in batches if necessary.
Cook the Air Fryer Salmon Bites at 400°F (200°C) for approximately 7–10 minutes, or until browned around the edges and cooked through. You can gently shake the basket halfway through for more even browning.
While the salmon cooks, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar until smooth and creamy. Taste and adjust the sriracha according to your preferred heat level.
Let the cooked salmon rest for 3–5 minutes, then drizzle with bang bang sauce or serve the sauce on the side.
Notes
For a lighter sauce, replace part of the mayonnaise with plain Greek yogurt. For a sweeter sauce, add a small additional drizzle of honey.
