Remove skin and bones from salmon and cut into 1-inch cubes.
In a bowl, mix soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger.
Add salmon cubes and toss to coat evenly.
Let marinate for at least 10 minutes (or longer for more flavor).
Preheat air fryer to 390°F (200°C).
Lightly spray the basket with oil and place salmon in a single layer.
Cook for 5–8 minutes, flipping halfway and brushing with leftover marinade.
Remove and garnish with sesame seeds and green onions.
