Line a rimmed baking sheet with wax paper. Lightly beat the egg in a wide, shallow bowl.
In a second wide bowl, mix breadcrumbs, Italian seasoning, and salt.
Dip each mozzarella stick into the egg, coating completely, then roll in breadcrumbs until fully covered.
Place coated sticks on the baking sheet without touching. Freeze for 30–60 minutes.
Remove from freezer and repeat the egg and breadcrumb coating. Freeze again for 30–60 minutes.
Preheat air fryer to 390°F. Spray basket and sticks lightly with cooking spray.
Air fry the mozzarella sticks for 6–8 minutes, until golden and crispy.
Serve immediately while hot and melty.
