Cut the mozzarella block into strips about 1.5cm wide. Pat each strip dry with kitchen paper.
In a shallow bowl, combine the plain flour and garlic granules.
In a second bowl, beat the egg with salt and freshly ground black pepper.
Place the panko breadcrumbs into a third shallow dish.
Coat each mozzarella strip in the flour mixture, then dip into the egg mixture. Repeat the flour and egg coating once more to create a double layer.
Roll the coated mozzarella sticks thoroughly in the panko breadcrumbs until fully covered.
Arrange the coated sticks on a tray and freeze for at least 30 minutes until completely firm.
Spray the air fryer basket lightly with olive oil spray. Place the Air Fryer Mozzarella Sticks in a single layer without overcrowding.
Spray the tops lightly with oil and air fry at 200°C for 10 minutes or until golden and crispy.
Repeat with remaining batches and serve immediately while hot and melty.
