Air Fryer Corn Ribs Recipe

Air Fryer Corn Ribs are crispy, buttery corn strips seasoned with spices and topped with cheese.

Ingredients
  

Corn

  • 3 fresh corn cobs
  • 4 tablespoons butter melted
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon black pepper
  • 2 tablespoons grated Cotija cheese or Parmesan cheese
  • Fresh cilantro chopped (optional)

Spicy Mayo

  • 1/2 cup mayonnaise
  • 1 tablespoon sriracha

Instructions
 

  • Trim both ends of each corn cob.
  • Stand each cob upright on a cutting board.
  • Using a sharp knife, carefully cut each cob in half lengthwise.
  • Place each half cut-side down and slice lengthwise again.
  • Cut each quarter in half to create long rib-like pieces.
  • Repeat with all corn cobs.
  • Melt the butter and brush it generously over all corn ribs.
  • Arrange the corn ribs in a single layer in the air fryer basket.
  • Air fry at 400°F (204°C) for 6 minutes.
  • Flip or rotate the corn ribs and cook for another 6 minutes until curled and lightly charred.
  • While cooking, combine mayonnaise and sriracha in a small bowl to make the spicy mayo.
  • In another bowl, mix chili powder, paprika, salt, garlic powder, cumin, and black pepper.
  • Transfer the cooked Air Fryer Corn Ribs to a large serving bowl.
  • Sprinkle evenly with the seasoning mixture.
  • Top with grated Cotija or Parmesan cheese.
  • Garnish with fresh cilantro if desired.
  • Drizzle with spicy mayo or serve it on the side for dipping

Notes

  • Cotija cheese adds authentic street corn flavor.
  • Adjust the sriracha amount to your preferred spice level.
  • Fresh lime wedges make an excellent garnish.
