Ingredients

For the Chicken

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • 2 teaspoons paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

For the Chicken Salad

  • 3 celery stalks diced
  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon onion powder

Instructions

  • Preheat your air fryer to 360°F (182°C).
  • Brush the chicken breasts with olive oil.
  • Season both sides with salt, pepper, paprika, cumin, garlic powder, and onion powder.
  • Air fry for 10 minutes, flip the chicken, then cook for another 7 minutes or until the internal temperature reaches 165°F (74°C).
  • Let the chicken rest for 5 minutes before cutting it into cubes.
  • For a finer texture, pulse the cooked chicken a few times in a food processor. Skip this step if you prefer chunkier pieces.
  • Transfer the chicken to a large bowl.
  • Add the celery, mayonnaise, Dijon mustard, salt, pepper, and onion powder.
  • Stir until everything is evenly coated and well combined.
  • Taste and adjust the seasoning if needed.
  • Serve the Air Fryer Chicken Salad on sandwiches, croissants, wraps, crackers, or over fresh greens.

Notes

  • Rotisserie chicken can be substituted if you're short on time.
  • Serve with toasted bread, croissants, lettuce wraps, crackers, or stuffed into pita pockets.
  • Add diced pickles or relish for extra tanginess.
  • This recipe is ideal for weekly meal prep.
