Pat the chicken dry and coat with olive oil.
Season both sides with salt, pepper, and garlic powder.
Preheat your air fryer to 380°F (193°C).
Place chicken in the air fryer and cook for 25–30 minutes until internal temperature reaches 165°F (74°C).
While cooking, mince celery and red onion, then place on paper towels to remove excess moisture.
Remove chicken and let it rest for a few minutes.
Remove meat from the bone and pulse in a food processor until finely chopped.
Transfer chicken to a bowl and mix with celery and onion.
Gradually add Miracle Whip until desired consistency is reached.
Taste and adjust salt if needed.
