Preheat the air fryer to 350°F (175°C).
In a small bowl, whisk together the sour cream, lime juice, chili powder, garlic powder, salt, and black pepper until smooth.
Lightly spray the air fryer basket with cooking spray.
Spread the chili-lime sauce evenly over one tortilla and place it sauce-side up in the basket.
Sprinkle the cooked chicken evenly over the tortilla, followed by the shredded Mexican-blend cheese.
Place the second tortilla on top and lightly spray the surface with cooking spray.
Secure the tortillas with 2–3 toothpicks around the edges to prevent them from lifting while cooking.
Cook the Air Fryer Chicken Quesadillas for 8 minutes, carefully flipping halfway through for even browning.
Remove from the air fryer and let the quesadilla cool for 2–3 minutes before slicing into quarters.
Serve warm with guacamole, pico de gallo, salsa, or sour cream.
