Rinse the cabbage wedges and pat them completely dry.
Dip the cabbage wedges in hot water for 5 minutes, then dry thoroughly with paper towels.
Preheat the air fryer to 350°F.
In a small bowl, mix turmeric, salt, red chili powder or paprika, oil, and lemon or lime juice.
Brush the marinade evenly over all sides of the cabbage wedges.
Line the air fryer basket with parchment paper and place the cabbage wedges in a single layer.
Air fry at 350°F until tender and lightly crispy, flipping halfway through, about 12–15 minutes depending on size and preference.
Remove from the air fryer and serve immediately.
