Ingredients

  • - 2 tomatoes diced
  • - 1½ cups shredded cheddar cheese
  • - ½ cup sliced black olives drained
  • - 3 green onions sliced
  • - 2 16-ounce cans refried beans
  • - 1 tablespoon chili powder
  • - ½ teaspoon ground cumin
  • - ¼ teaspoon salt
  • - 2 tablespoons water
  • - 2½ cups guacamole
  • - 1½ cups sour cream

Instructions

  • Dice the tomatoes, shred the cheddar cheese, drain the sliced black olives, and thinly slice the green onions. Set aside.
  • Add the refried beans to a medium mixing bowl.
  • Add the chili powder, cumin, salt, and water. Stir until the beans and seasonings are thoroughly combined.
  • Spread the seasoned refried beans evenly across the bottom of a 9x13-inch casserole dish.
  • Carefully spread the guacamole over the bean layer, taking care not to mix the two layers together.
  • Spread the sour cream evenly over the guacamole.
  • Sprinkle the shredded cheddar cheese across the sour cream.
  • Finish the 7 Layer Dip with an even layer of diced tomatoes, sliced black olives, and green onions.
  • Serve immediately with tortilla chips, or cover and refrigerate until you're ready to serve.

Notes

For the freshest flavor and appearance, add the tomatoes, green onions, and olives shortly before serving.
You can make homemade guacamole or use your favorite prepared version when you need a quicker option.
Serve this Mexican 7 layer dip with tortilla chips, corn chips, fresh bell pepper strips, cucumber slices, or other crunchy vegetables.
For individual party servings, assemble the layers in small clear cups instead of one large casserole dish.
