4 ingredient chicken rice casserole

A simple 4 ingredient chicken rice casserole made with chicken, rice, soup, and seasoning.

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup long grain white rice uncooked
  • 1 ½ cups water
  • 1 packet dry onion soup mix
  • 1 can condensed cream of mushroom soup

Instructions
 

  • Preheat oven to 325°F (160°C).
  • Lightly grease a 9×13-inch casserole dish.
  • Place chicken breasts in the dish and season with salt and pepper.
  • Pour uncooked rice evenly over the chicken.
  • Sprinkle onion soup mix on top.
  • In a bowl, mix cream of mushroom soup with water until smooth.
  • Pour the mixture evenly over the casserole.
  • Cover tightly with foil and bake for 1 hour 15 minutes, or until the rice is tender and the chicken is fully cooked.

Notes

  • Add vegetables like peas, carrots, or mushrooms for extra nutrition.
  • Swap cream of mushroom with cream of chicken soup if preferred.
  • Serve with a fresh green salad or steamed vegetables.
