Ingredients
  

  • 2 cups shredded cheese
  • 2 large egg whites
  • Oil for frying
  • Kosher salt optional

Instructions
 

  • Pour about 2 inches of oil into a saucepan and heat to 350°F (177°C).
  • In a mixing bowl, combine shredded cheese and egg whites.
  • Mix thoroughly until a soft dough forms.
  • Scoop about 1.5 tablespoons of dough and roll into balls.
  • Place on a parchment-lined surface.
  • Carefully add a few balls to the hot oil.
  • Fry for 3–4 minutes until golden brown and crispy.
  • Remove and drain on paper towels.
  • Lightly sprinkle with salt if desired.
