Heat a large skillet over medium-high heat.
Brush both sides of each pita round with olive oil.
Sprinkle the pita evenly with za’atar.
Working in batches, toast the pita in the skillet until golden brown and crisp, about 2 minutes per side.
Transfer the pita to a cutting board and cut each round into quarters.
Place the Greek yogurt in a small bowl and season with salt and black pepper to taste.
Arrange the toasted pita wedges, seasoned yogurt, hummus, artichoke hearts, roasted red peppers, olives, cherry tomatoes, and halal beef salami onto serving plates.
