15 Minute Mezze Plate with Toasted Za’atar Pita Bread

Ingredients
  

  • 4 whole-wheat pita rounds
  • 4 tablespoons extra-virgin olive oil
  • 4 teaspoons za’atar
  • 1 cup Greek yogurt
  • Kosher salt
  • Freshly ground black pepper
  • 1 cup hummus
  • 1 cup marinated artichoke hearts
  • 1 cup sliced roasted red peppers
  • 2 cups assorted olives
  • 2 cups cherry tomatoes
  • 4 ounces halal beef salami

Instructions
 

  • Heat a large skillet over medium-high heat.
  • Brush both sides of each pita round with olive oil.
  • Sprinkle the pita evenly with za’atar.
  • Working in batches, toast the pita in the skillet until golden brown and crisp, about 2 minutes per side.
  • Transfer the pita to a cutting board and cut each round into quarters.
  • Place the Greek yogurt in a small bowl and season with salt and black pepper to taste.
  • Arrange the toasted pita wedges, seasoned yogurt, hummus, artichoke hearts, roasted red peppers, olives, cherry tomatoes, and halal beef salami onto serving plates.
